Cidre Birne 2019
The Pears for this cider comes from trees that have long been neglected and fruit wasn't harvested in a while, with some trees being over 100 years old. Benjamin and Markus are trying to give a new purpose to those trees. Naturally, the fruit brings a lot of acidity and tannins and is actually inedible raw but when fermented, it brings another dimension to the words pear cider.
Nothing like the overly sweet and rather uninspiring pear ciders out there but one with a backbone and beautiful fruit structures.
